Chapulines and Food consumption

CHAPULÍN, A FOOD ALTERNATIVE WITH A GREAT SOURCE OF PROTEIN: ENTOMOPHAGY AS A FOOD SUPPLEMENT AND ITS IMPACT ON THE DAILY DIET

Abstract

The ingestion of animal meat proteins is a practice that has accompanied mankind for centuries. However, the growing demand for food and the high degree of contamination involved in its production have led to the search for not just healthy but sustainable alternatives. The consumption of insects (entomophagy) is one of them; it is a common practice in many countries around the world, including Mexico, where the best-known case is the consumption of "chapulines", an excellent source not only of protein but also of minerals and vitamins. We present a summary of what it consists of, how it is manufactured, and its advantages when added to the diet of humans.
