Antioxidants from amaranth with nutraceutical capacities for the treatment of cardiovascular diseases

Abstract

Cardiovascular diseases are a recurring health problem in Mexico, furthermore, several factors can trigger these pathologies. Observational and experimental studies establish a correlation between oxidizing compounds and the progression of cardiovascular diseases. The oxidation defense mechanism involves exogenous factors such as diet. Species of the Amaranthus genus have several compounds with antioxidant capacity. In this article, a bibliographic review of the main antioxidant compounds of amaranth is presented and the possibility of creating a nutraceutical food to prevent cardiovascular diseases is analyzed.
