Abstract

Vaccines stimulate the immune system to provide protection to the individual against further infections. The lack of immunization in developing countries is undoubtedly the most serious consequence of the difficulty in accessing traditional vaccination systems. In the last decade, plants have proven to be versatile production systems for a variety of antibodies because they can serve as biofactories to produce vaccine antigens. Its industrial-level design is an easy-to-administer strategy, free from the use of syringes since they are edible, much lower cost because purification costs come out of the equation, and highly controlled conditions are not required for storage, nor should they be applied to antisepsis protocols as in the case of injections. Although plant-based edible vaccines have benefits, they also represent challenges to overcome food allergies, among which is the pollen-food syndrome (PAS).
